A Quick Lunch or Fast Dinner Recipe

I just played with ingredients and created this ultra fast meal that I found to be especially easy and delicious, not to mention pretty healthy. You can alter the amount of butter/oil to make it more or less fattening and can make various alterations to it. If you don’t like mushrooms, you could substitute mushrooms for onions or eggplant or kale or tomatoes. The recipe serves 2, but it is easily expanded to serve more. You get to choose how you like your eggs: scrambled, over-easy, sunny side up, etc…. I hope you enjoy it!
